Carrot and Apple Muffins
These ‘Carrot and Apple Muffins’ are a nutritious choice as they are packed with wholesome ingredients – fruit, vegetables, and wholegrains. These muffins are also egg and dairy free but you can add in one egg instead of the egg replacer and water, and any milk you have on hand, if allergies are not an issue.

Fruit Sticks
These fun and delicious fruit sticks are made by threading different coloured chopped fruits onto a paper straw. We used some fruit with its skin on and some fruit peeled. This is a great activity for kids to join in. Also, if they help make the fruit sticks, they are more likely to try eating them. This activity is a great way to use up fruit that may be a bit bruised from travelling in a lunch box, being in the bottom of a bag or just sitting in the fruit bowl for a while.

BCE Biscuits - Chickpea Choc Chip
A soft yet crunchy biscuit that contain chewy chickpeas. A great snack or lunch box addition. Egg free biscuits that are quick and easy to make. Best eaten within 2 days of baking as the chickpeas will get hard
Choc Zucchini Muffins
A delicious chocolaty portable snack that also has a secret ingredient – Zucchini! The Zucchini adds to the richness and stops these muffins being dry. It also adds fibre and nutrients. It almost disappears during cooking and is further camouflaged by the chocolate chips.
As these muffins are fairly robust, and can withstand changes in temperature, they can be a great addition to the lunch box (for kids and adults), a satisfying pre or post workout snack, a handy option for after school, before sport, or afternoon tea, especially when out and about.
