Description
This Banana Nut Bundt Bread is handy to have for a quick snack or for breakfast on the go. Banana Bread is known for being a delicious, sweet and soft type of loaf with a variable texture from cake like to bread like. This recipe is more like a cake or muffin than dry bread.
Banana Bread is very versatile and can be eaten at any time of the day. It is also very easy to make, especially this version where everything goes in the food processor so you don’t need to mash the bananas.
If you have some over ripe bananas this is a great way to use them up. It can also be made in a Loaf tin instead of a Bundt tin. It could also be made into muffins. If you don’t like nuts, you could substitute with dried fruit, seeds like pepitas or chocolate chips.
This recipe would also make a great gift for someone or something tasty to take to a function, like Biggest Morning Tea, Parents Group or Book Club
Preparation and cooking time
Around 15 min prep and 25 min cooking time
Equipment
Oven preheated to 180`
C (350`
F), with oven shelf in the middle of ovenFood Processor
Bundt Tin sprayed with Canola Oil (Or however you choose to grease/flour/butter your tin)
Spoon to scrape batter into tin
Measuring Jug – at least 1 cup – used to measure liquids
Measuring cup set - 1 cup ½ C 1/3 C ¼ cup – used to measure dry ingredients
Measuring spoons – 1 tablespoon, 1 teaspoon , ¼ Teaspoon, – used to measure liquids and dry ingredients
Oven Mitt

12 Slices, Approx 88g each Slice
List of ingredients
½ Cup Sunflower Oil (Or another vegetable oil)
2 Large Free Range Eggs
1 teaspoon Vanilla Extract
2 Medium Size Ripe Bananas
30mL Water
½ Cup Milk (Or Milk Alternative)
1 ½ Cups Self Raising Flour
1/2 Cup Plain Wholemeal Flour (or Plain Flour if you prefer)
½ Teaspoon Cinnamon
3/4 Cup Caster Sugar
1/2 Cup Chopped Nuts (Like Walnuts, Pecans, Macadamia Nuts)
Canola Spray
Step-by-step Method
Preheat oven to 180`c (375 ` F)
Spray Bundt Tin with Canola Spray
In Bowl of Food Processor add all ingredients except nuts. Tuen processor on and blend until smooth.
Add the nuts and blend for a few seconds.
Pour mixture evenly into Bundt Tin.
Cook in oven about 20 – 30 min until cooked and springs back when lightly pressed with a finger. Check after 15 min, as times will vary depending on your oven.
Cool in tin for 10 min before transferring to a wire cooling rack to cool. We suggest using a flexible plastic spoon to push down in the middle and sides on the Bundt tin to loosen the bread before turning out.
NOTES:
Banana Bundt Bread will last in an airtight container in a cool pantry for up to 5 days. If you live somewhere with a warmer climate, keep the in fridge. Can be frozen up to 2 months.

Cool in tin then carefully turn out
- We kept ours with the brown side down and sliced it into about 12 slices to serve. We stored it in an airtight container.
