Mini Rainbow Pizzas

Description

These Mini Rainbow Pizzas are quick, easy, fun and nutritious! This recipe was developed for a Healthy Lunch Box Food & Nutrition Cooking Session at an Early Learning Centre (ELC). You can change the toppings to what you have at home or what is preferred using at least three colours to give a rainbow appearance. For example,0 sometimes we have used grated pumpkin instead of carrot and canned corn instead of yellow capsicum. This cooking activity is a good chance to introduce a different vegetable that children may not usually eat.

Often vegetables cooked in the oven have a different taste compared to if they are cooked in water or steamed. The dry slow heat of the oven can have a caramelising effect on some vegetables, for example roast pumpkin and carrot, and they can actually taste sweeter than usual and may be more likely to be eaten.

While making the pizzas you can talk about eating a variety of coloured vegetables to get all the nutrients they need, like putting together the pieces of a puzzle. You can also talk about how the different vegetables taste and smell, some are sweeter like carrot and capsicum and some can taste more bitter like broccoli and cabbage.

This recipe used pre-made mini pizza bases from the supermarket but you could also use wholemeal pita bases cut in half, or make the dough from the BCE Veggie Scroll Recipe. You can also replace the cheeses with dairy free plant based or lactose free as needed.

Preparation and cooking time

Around 15 min prep and 10 min cooking time

Equipment

  • Oven preheated to 220`C (430`F), with oven shelf in the middle of oven

  • Baking Trays

  • Spoon

  • Grater

  • Knife

  • Bowl

  • Chopping Board

  • Bowls for each colour of  ingredients if not going straight onto pizzas

  • Oven Mitt

NOTE: Please wash all fresh produce before use

List of ingredients

6 Mini Pizza Bases Cut in Half

(Can also be Wholemeal Pita Bread, English Muffins, other type of base, or homemade dough. We used Simson’s Pantry Mini Pizza Bases - not sponsored)

1 Large Carrot Grated

1 Medium Red Capsicum cut into strips

1 Small Head of Broccoli Chopped finely

1 Small Yellow Capsicum Chopped into strips

¼ of a Whole Purple (aka Red) Cabbage shredded (sliced thinly)

1/4 Tub Cream Cheese OR ¼ Jar Tomato Paste OR ¼ Bottle of Tomato or BBQ Sauce (sugar and salt reduced)

1 Cup Grated Tasty Cheese (or alternative like plant based or lactose free)

Jars of Dried Herbs: Basil, Oregano, Garlic – sprinkle of each on each pizza (or you can use fresh if available)

  

Step-by-step Method

  1. Preheat the oven to 220`C.

  2. Line trays with Baking Paper

  3. Cut six mini Pizzas Bases (or other base of your choice) in half to make a semi circle shape. Place on baking trays.

  4. Spread about 1 teaspoon of Sauce, paste or Cream Cheese on each Pizza base

  5. Sprinkle on dried herbs

  6. Sprinkle on grated cheese

  7. Next you will layer five vegetables colours in the shape of a rainbow from the outside to the inside, for example: Orange Carrot, Red Capsicum, Green broccoli, Purple cabbage, Yellow capsicum, as described below. 

  8. Grate 1 Carrot into a medium bowl (unpeeled). Add to Pizza.

  9. Chop Red Capsicum into strips. Add to pizza.

  10. Chop Broccoli florets. Add to pizza.

  11. Slice/Shred Purple Cabbage thinly. Add to pizza.

  12. Chop yellow capsicum into small strips. Add to Pizza.

  13. You can write children’s names next to their pizzas on the baking paper with a pencil if needed.

  14. Bake for about 10 minutes until base is starting to crisp and vegetables are cooked. Eat when cooled down.

NOTES:

  • You can use left over vegetables in a salad, stir fry or as a snack

  • Mini Pizzas are best eaten within 24 hours of cooking as they will get soggy, but can last up to 3 days in the fridge in an airtight container. If not having in a lunch box, they could be reheated in an air fryer or oven for a few minutes.
